Over the Rainbow Cupcakes


Cupcakes are so yummy in all forms. Mini, regular, or giant sized, each bite is baked to perfection.  My favorite type of cake and cupcake is Funfetti.  You can read about my delicious obsession here, in cookie form!  No matter what flavor you like best, you can't go wrong when topping your cupcake off with a Rainbow!

How to make a Somewhere Over the Rainbow Cupcake

The Necessities:
Cupcake Fixings (Boxed of from scratch, your choice!)
Vanilla Frosting
Food Coloring
Rainbow Sour Belts
Piping Bag

The Instructions:
*Bake your favorite flavor of cupcake, whether it be red velvet, funfetti, chocolate, or vanilla.
*Let it cool.
*Choose your favorite color dye to add to vanilla frosting for some brightness.  Green would be perfect for St. Patrick's Day coming up!
*Set some of the plain vanilla frosting to the side.
*Frost the top of the cupcake with a knife.
*Cut Rainbow Sour Belts in thirds
*Using a piping bag, place plain vanilla frosting inside and squeeze out a small amount to create two "cloud like" bases to secure the rainbow 
*Bend Rainbow Sour Belts and place each end in the "clouds"

This is a fun and easy activity for kids.  The final product will of course taste delicious, especially with the Sour Belts on top!  All of your guests will smile as soon as they see these.

Raspberry Chocolate Kiss Cocktail


  • Who's ready for Valentine's day!?  Hope you have all been snacking on cake pops, chocolate, sour candy, and conversation hearts.  Only 5 more days to go so you better get cracking if you haven't been snacking!  Anyways, it's the last Thirsty Thursday before the big V-day, so we need to celebrate with the Raspberry Chocolate Kiss Cocktail.

Ingredients

  • 1/4 cup Mint-Infused Simple Syrup
  • 3 chocolate cookies, finely crushed, such as Nabisco Famous Wafers
  • 10 raspberries
  • 1/4 cup vodka
  • 2 tablespoons cranberry juice
  • Ice cubes

  • Instructions
  • Fill a dish with simple syrup. Crush cookies into another dish. Dip martini glass into simple syrup and then immediately into crushed cookies to coat the rim of the glass.  Fill shaker with ice and add crushed raspberries, simple syrup, vodka and cranberry juice and shake, shake, shake!  Pour into martini glass and serve immediately.

Valentine's Day Cake Pops

Valentine's day is coming up so very soon.  Any ideas on what you should be snacking on with your lover?  I've got a great one!  Valentine's Cake Pops.  YUM!  I was special enough to taste these when my friends at the Chips Chocolate Factory kindly sent some my way.  And I'm not just trying to be nice, but they were the BEST CAKE POPS EVER!  


The Chips Chocolate Factory gave me three different kinds to try.  Aside all of these being aesthetically pleasing and the prime definition of eye candy, they were all so, so scrumptious!  


Let's start with my favorite pick....the Cookies and Cream Cake Pop.  When biting into it, I immediately tasted how moist it was.  While chewing on it, I could taste all of the creamy and buttery taste of yellow cake.  With the outer shell made up of crushed chocolate cookies and tasted like chocolate frosting.  Each bite was full of crunchy, chewy, and moist textures all at once.  It was so moist that the inside actually looked wet and I've never seen anything like that before.  It was so gooey and great.  
Next was that Strawberry and Cream Cake Pop.  As with the Cookies and Cream cake pop, this one was just as moist.  Eating this one tasted like you were actually chewing on a gulp of strawberry milk.  The texture of this one was creamy but more crunchy because it was covered in white, red, and pink sprinkles.  The outside was white chocolate and the inside was a delicious yellow cake.  If you are a Strawberry flavored lover, definitely try these! 
And last but not least, was the Red Velvet Cake Pop.  This was definitely the most festive cake pop because of its red hue.  Way to get in the Valentine's day spirit, because even your tongue will get pink after consumption.  This was amazingly moist, the outside pink and red sprinkles made the texture crunchy, and the outside tasted like a white chocolate frosting.  Talk about delicious!  It tastes just like you cut yourself a slice of a big Red Velvet Cake, so if you love that, you'll love these!
I was so happy to have the chance to review these sweet Valentine's treats.  I would describe these as perfection on a stick.  Thanks so much to the Chips Chocolate Factory for getting me in the Valentine's day mood and making my tastebuds happy!  It's not too late to order these for V-day!
